As for stuff to do: You're gonna have to go north. JBLM is in a shitty area. Working everyday will probably fuck you, but if you don't mind driving up to Seattle you can do the Seattle Bites tour (http://www.seattlebitesfoodtours.com) or the segway tours are fun if you've never been here before (http://www.seattlebysegway.com/) The usual tourist stuff is Seattle Center (Space Needle, Experience Music Project) hop on monorail here, walk the 2 blocks to Pike Place Market, then return.
For food: Salty's at Alki. Mildly expensive (But good) seafood, with an amazing view of Seattle. Try to go just before dusk, so Seattle lights up while you're eating. Don't eat at the top of the Space needle, but don't be afraid to go up it. If you want something closer to JBLM I like The Lobster Shop on the Tacoma waterfront (Not the one at Dash Point.) If you've never had king crab legs go there and get them.
Visit Valve.

It all depends on what you're looking to do really.
If music is your thing, see if the Triple Door has anything you like listed. It's a restaurant/theater combo, tickets weren't too bad last time I went.
Definitely check out the Pike Place Market, it's a fairly eclectic mix of shops and such, lots of street performers too. Maybe hit the Seattle Aquarium at the same time, since you'll be in the area. (Assuming you like to stare at fish, and think that the local fish are worth staring at.)
If you're a fan of Japanese/Chinese food, the International District is sort of centered on 5th and Jackson or so, there are a couple good bubble tea places (Gossip, Oasis), an import store for games and such (Pink Godzilla), and an import store for general goods (Uwajimaya, it's freaking huge, and has pretty much every quintessentially Japanese thing you can think of, except beer vending machines.)
The Seattle Public Library is pretty interesting, the building is worth a visit just to see the architecture.
Pioneer Square is a bit of mess. Lots of bars and clubs and such on 1st and 2nd Ave., but I wouldn't wander around there at night without a sidearm.
The Museum of Flight and the Flying Heritage museum aren't right in Seattle, but they're fairly interesting. You might check them out if you have time for a day trip.
Fremont is worth a look as a weird art neighborhood. Lots of good restaurants in the area too.
The Pacific Science Center and the attached IMAX theater can be worth a visit, the butterfly house is pretty spectacular at times. I'd recommend looking up the current exhibits/shows to see if anything tickles your fancy.
Nothing else comes to mind off the top of my head. Is there any specific sort of entertainment you're looking for?

If that isn't your style, you can always go to Ivar's Chowder house on the Seattle waterfront. It's right next to the Victoria Clipper, so is pretty easy to spot.
If you want to just walk around, check out Gasworks Park and just walk along 1st Ave. Some decent clubs and stores there.
University District is kinda hipster-ish, but otherwise has some decent food and sights if nothing else than walking around the University of Washington main campus. Most everything of note is located on or near University Avenue. I recommend Fin Mccools Pub and Bar and Ichiro's Teriyaki if your on a budget.
If you want Asian food and want to stick close to Tacoma/Fort Lewis Mcchord, then just go to Lakewood and check out Boo Han market. Whenever I am down near Tacoma, I head that place up for everything I could want. It's kinda funny, but the best Asian food I have found in the Puget Sound area has either been in Northgate (North of Seattle) or in the Tacoma area. But I doubt you want Asian food, since you were just in Japan if I recall correctly.
Although I live just east of Seattle, I try to avoid the city as much as possible. I have my own car, and the Seattle streets continue to confuse the hell out of me. And it's seedy as fuck.

Theres a dim sum place in Int district called Sun Ya that is the bomb. If you ask nicely, they will bring you chicken feet. Even if youre the white dude. About 2 blocks away is a place called Pho Bac. Its kinda a dump but hands down best Pho in Seattle.
The EMP and the Space Needle is worth doing at least once. Pike place is awesome on a Saturday or Sunday morning. Grab a bag of doughnuts and check out everything.
Also if you have decent transportation, you can head northeast of Seattle towards Woodinville and do the Red Hook brewery tour which is a lot of fun but I havent done it in a number of years.
Check out Snoqualmie falls, top of the Columbia tower, get a burger at Dicks drive-in. check out the Lenin statue and the troll in Fremont, go visit Archee McPhee, or go eat a shitload of seafood at the Crab Pot.

In Tacoma itself there is the blown glass museum. JBLM itself is kind of the real big "thing" in that area. You have to leave Tacoma to see a lot of the things "to see" in the Puget Sound
I've also taken out of town guests who like historical stuff on the Underground Tour down in Pioneer Square. Up north a bit the Boeing Factory tour is interesting - the scale of everything is quite impressive.
