    Yeah looks nice man. Meatballs are one of those things a rarely cook but always enjoy when i do.

    I got all excited about this omelette I was making, would have poasted pics but it split down the middle when I folded it in half, so then I emo'd and just ate it out of the pan as it was...

    Bin Matar continues his epic tradition of food porn. And that penne looks pretty damned handsome too, fng.

    Ninjaedit: fng, that does look like an interesting yet fiddly method for doing the capsicums. It seems rather like just dicing and sauteing them (possibly even at the same time as the eggplants) would be a lot faster. Probably slightly less interesting flavour-wise, but a hell of a lot easier.

    If you have a gas hob you can achieve the same just sitting the peppers directly over the flame turning until the whole things charred then use a clean cloth to wipe the blackened skin off.

    Or buy roast peppers in olive oil.



    Jerk chicken thigh and roast pepper rice.

    Messy plate but dam tasty.

    JERK RECIPE

    scotch bonnet peppers to your liking
    6 Cloves garlic
    2 Medium onions
    2 Tbsp thyme
    1 Tbsp ground allspice
    1/2 tsp Cinnamon
    1/2 tsp ground ginger
    1 Tbsp sugar
    1 Tbsp salt
    2 Tsp ground black pepper
    1 tomato
    100 ml ish orange juice
    50 ml ish olive oil
    50 ml ish white wine vinegar
    lime juice of 1 or 2 limes

    Put it all in blender and blitz to a unappealing looking but lovely smelling slurry. Take a couple of tablespoons of it out and keep to one side for the rice. Pour the rest over whatever meat you want (i used skinned boneless chicken thighs as breast meat is wank tbh). Marinade for as long as you can, overnight is best. When ready to cook scrape off the excess and keep to one side the jerk sauce then cook the chicken. I normally start them in a griddle pan to get a nice char on each side then put in oven till done. (Thighs can be a bit deceptive so check the juices run clear etc)

    RICE

    long grain rice
    red yellow green bell pepper
    spring onion/scallions
    some of the jerk sauce

    Cook and and put to one side your rice

    Chop a red green and yellow pepper into cubes along with a fairly roughly chopped red onion and put in a roasting tray. Drizzle them in olive oil and a couple of table spoons of the jerk sauce and roast till softened and sweet. 30 ish mins in a 220c/425f oven with me giving them a good mix up in the pan every 10 mins or so is normally good. When done drop your rice in to the roasting tray and mix it in to the peppery jerky oily goodness.

    I normally cook the rest of the marinade for long enough to make safe from the chicken and take the sharp edge off and spoon it over the finished chicken.

    Plate up and top with chopped spring onions and a squeeze of lime.

    Yesterdays leftover leg of lamb ground up and mixed with couscous, beetroot, carrot, coriander and spices. Chinese leaf cabbage and radish and tomato and coriander salads. Cucumber and mint raita slapped all over.
