    My first attempt at smoking meat came out way better than expected:

    Smoked ribs with a Jamaican jerk dry rub and some garlic & rosemary mashed potatoes.

    My contribution is om nom nom.

    Ciabatta bread rolls, sliced in half. Fry bacon and red onions bits. Once cooked, place inside sliced ciabatta. Place several large chunks of roquefort cheese on top and then bang in oven to warm bread and melt cheese. Once melted, take out, sprinkle a touch of coriander on top. Serve with cherry tomatoes and a side salad.

    mmmm yes!

    Yummy ribs and a nice sandwich.

    For lunch today: Scallops, Pea Puree, Bacon and Pomegranate (and White Cocolate Ice Cream with the remaining Pomegranate)

    Calf`s Liver Berlin Style (caramelized apples and fried onions) with a Madeira / Balsamico reduction.



    Was damn yummy. Some of the few occasions I was really satisfied with the outcome. Picture wise I am unhappy about the sauce that tainted the mash and some of the mutinous green bits.

    For these kinds of emergencies I always keep a stack of spaghetti, a can of decent whole tomatoes and a glass of capers hidden in the cupboard. Add some spices (chilies!), herbs and granted parmesan cheese and you`re golden.

    Chicken breast in marinade (Dijon mustard, lemon juice, garlic and herbs), with sliced green onions. Very simple and easy, quick to make and very tasty.

    Mh I guess I will take it as a compliment. Its the same background / spot (my kitchen) as on my other pics. Its the same plate I used for var. dished that I posted and I could post the other like 6 shots I took from that dish.

    Why bother though. Its not that hard to sprinkle some Pomegranate (not only there for the look but their acidity cuts nicely into the pea puree) over the plate. Also while I like the overall design (and taste) of my dish I`m not satisfied with the outcome and its far from professional. Pro`s would have used bigger scallops, the bacon roll is not big enough, the mangetout stripes on the scallops should be coated with oil/butter for more gloss and the pea puree is not green/bright enough as I had to reheat it to get the right consistency.

    I love mustard on a lot of stuff and... looks like a nice stove you have there.

    I know it is "just" a beef sandwitch but jesus fuck that looks good.


    edit: I have tried to make that several times and although tasty and stuff I can never find bread that does the job well in this town. :/ It is either baguettes that are too small and everything falls off or I have to go with a loaf of bread which is also quite unsatisfying for the job. :/

    Make baguette yourself, profit.

    Not that I have went through with my "plan" to bake my own bread every now and then and could offer actual advice, but especially white bread really should be piss easy to make.
