peppers
Chinese cabbage
mushrooms
Any or all of the above or what ever you have available really.
Misc
Peanuts/cashew nuts
SIRIACHA sauce (flying goose brand is heroin)
oyster sauce
coriander
thai basil
limes
Method
Bring stock to simmer
Add ginger, garlic, star anise and coriander stalks
simmer for 10 mins then add the other ingredients to taste
Sieve out ginger etc
leave to one side on simmer
Prepare noodles as per instructions
Slice and stir fry veggies in small amount of oil with some garlic chilli and grated ginger
Add noodles to bowl top with stir fry and then ladle your hot broth over it all.
Add peanut/cashews coriander/basil and SIRIACHA/oyster sauce and lime to your liking.
Hints tips.
Always grate ginger using the finest grater you have. Pulp is better than lumps of ginger
This recipe is impossible to fuck up as long as your broth is good
It always tastes better if you add loads of the broth ingredients, 2/3 squeezed limes lots of chilli garlic etc
add the mushrooms raw and let the broth cook them in the bowl
Hope you enjoy

Bacon-wrapped chicken breast w/pasta from last night. I just kinda improvised with what I had in the house. I found it kinda boring, but gf liked it.
