I saw that Stronghold 3 is coming out soon and the first two games are on steam. I don't know anything about them but they seemed like interesting games. So tell me FHC, are they worth picking up?

Stronghold 1: Build castle, defend against rampant hordes of enemy, never get to finish castle. Great game...for it's time.
Stronghold 2: fixed all the wrong bits, broke all the good bits. Tried to make a campaign, didn't really work. Micromanagey.
Stronghold 3: Promises to go back to the proper Castle building and management of Stronghold 1. Looking forward to it.
Best way I can describe the first one is Age of Empires with proper castle tools and Dwarf Fortress's economy and happiness systems grafted in.
You grow wheat on oasis to mill it into flour at a windmill to bake it into bread in bakeries so that you have a second food source to make your population happier so you can raise taxes to afford to train more soldiers who are equipped with the weapons you made by mining iron and chopping wood then crafting them in bowyers and blacksmithies.
Stronghold 1 + Crusader are definitely worth getting
I've had Stronghold 2 sitting on my computer for the last couple of years and I still haven't been bothered to finish it, although I have got more than half way through both the military and economic campaigns.
The main economic constraint is not having enough room to build buildings and the main military constraint is can you bring a big enough blob and I don't think that either makes for a particularly interesting game. Whatever the magic formula for fun is in military games (Total War had it, but was too repetitive imho) Stronghold 2 doesn't quite have. I think it gets a little closer economy wise but again it falls short of, say, Tropico, The Settlers or Civilization/Alpha Centauri.
Stronghold is good but leaves you wanting more. Stronghold two gives you more & leaves you regretting that you wanted it.
Also, graphically both games are not the nicest aesthetically. Stronghold is good but not exceptional 2D, while Stronghold 2 is pretty damn ugly (to be fair, most 3D games were in 2005).
Loved stronghold vanilla when it was new. Pretty good game at that time.
Stronghold2... was shit.
Stronghold crusade was pretty amazing for it's time, fuck the wolf, fuck him.

It's a major letdown. Graphics are basically the same as 2 (the first SH to use 3D) and the mechanics go full retard. You can knock down stone fucking walls with pitchforks. Not that the walls are of use, since archers can just fire through them at your units. Oh, and there's no real skirmish mode.
Wow I didn't think they could make it worse than 2 but there you go.
FFUUUUUUU. Skyrim better be fucking good, or all the games I've been waiting for will be a sore disappointment.
Back to OTTD and goddamn minecrack then.
