You will always want a round that not only transfers energy properly through deformation in a non explosive but steady manner, but you also want the bullet to leave the animals body to create an exit wound so energy needs to be sufficient. Especially on larger game where a bone can absorb quite some impact. Usually people will end up hunting with a good lead expansion round like a Federal Fusion OR when they prefer(or are mandated to) use lead free, something like a Barnes TSX/TTSX. Especially lead-free, velocity is even more important.
Typical small game like foxes or doe can be hunted well with .223, but for anything larger, .308 is really a superb choice. Available anywhere, all bullet types available, cheap fmj for practice. Once you move into bear moose, you should step up to something like .300wsm or even better, .375 Ruger.
